Shallot And Herb Pan Sauce

Ingredients

  • 1 handful sweet herbs
  • 1 handful shallots or small onions, chopped
  • 1 cup broth or warm water
  • 2 tbsp vinegar
  • Salt and pepper to taste
  • 2 tbsp butter rolled in flour (or 1 tbsp olive oil)

Method

  1. 1 Chop the sweet herbs and shallots finely. Place them in a saucepan with vinegar, salt, pepper, and enough broth or water to cover.
  2. 2 Bring to a gentle boil and simmer for 15 minutes.
  3. 3 Remove from heat. Stir in butter rolled in flour until melted and smooth, or stir in olive oil.
