Shallot And Herb Pan Sauce
Ingredients
- 1 handful sweet herbs
- 1 handful shallots or small onions, chopped
- 1 cup broth or warm water
- 2 tbsp vinegar
- Salt and pepper to taste
- 2 tbsp butter rolled in flour (or 1 tbsp olive oil)
Method
- 1 Chop the sweet herbs and shallots finely. Place them in a saucepan with vinegar, salt, pepper, and enough broth or water to cover.
- 2 Bring to a gentle boil and simmer for 15 minutes.
- 3 Remove from heat. Stir in butter rolled in flour until melted and smooth, or stir in olive oil.
