Shakshuka With Cheese And Toast

Ingredients

  • 2 large eggs
  • 3-4 tomatoes, chopped
  • 1 tbsp butter
  • 1 clove garlic, halved
  • 2 tbsp grated cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)
  • Toast for serving

Method

  1. 1 Melt butter in a saucepan with the halved garlic clove. Add chopped tomatoes, cover, and cook until very soft.
  2. 2 Remove and discard the garlic. Strain the cooked tomatoes through a fine sieve into a clean bowl or bain-marie.
  3. 3 Beat the eggs and stir them into the strained tomato mixture. Season with salt and pepper.
  4. 4 Return to low heat and stir constantly until the mixture thickens like a soft custard.
  5. 5 Stir in the grated cheese. Serve immediately over toasted bread.
