Shakshuka With Cheese And Toast
Ingredients
- 2 large eggs
- 3-4 tomatoes, chopped
- 1 tbsp butter
- 1 clove garlic, halved
- 2 tbsp grated cheese
- Salt and pepper to taste
- Fresh parsley, chopped (optional)
- Toast for serving
Method
- 1 Melt butter in a saucepan with the halved garlic clove. Add chopped tomatoes, cover, and cook until very soft.
- 2 Remove and discard the garlic. Strain the cooked tomatoes through a fine sieve into a clean bowl or bain-marie.
- 3 Beat the eggs and stir them into the strained tomato mixture. Season with salt and pepper.
- 4 Return to low heat and stir constantly until the mixture thickens like a soft custard.
- 5 Stir in the grated cheese. Serve immediately over toasted bread.
