Seville Orange Marmalade Tart
Ingredients
- 8 Seville oranges
- 1 ½ cups double-refined sugar
- 12 oz all-purpose flour
- 6 oz unsalted butter
- 2 egg yolks
Method
- 1 Cut oranges in half, remove seeds, and scrape out the orange flesh, discarding white pith. Remove seeds from cores.
- 2 Boil the orange cores and seeds until tender and no longer bitter. Drain and dry thoroughly.
- 3 Beat 5 orange peels in a mortar until smooth. Mix with the sugar and orange juice. Pounding well.
- 4 Slice the remaining unbeaten orange peel. Reserve some sugar for icing later.
- 5 Make crust: Mix flour, melted butter, and beaten egg yolks. Roll out, prick well, and bake.
- 6 Spread orange mixture into the baked crust. Top with reserved sugar to ice. Bake until set.
