Sesame Ginger Quinoa Salad With Green Beans
Ingredients
- 1 cup quinoa
- 1 1/2 cups water or broth
- 2 1/2 cups green beans
- 1 tablespoon lemon juice, freshly squeezed
- 1 tablespoon olive oil or cooking oil
- 2 tablespoons sesame oil
- 1/4 teaspoon soy sauce, reduced sodium
- ground ginger
- salt and pepper
Method
- 1 Toast quinoa in a dry skillet over medium heat, stirring constantly for about 3 minutes.
- 2 Transfer quinoa to a medium pot, add water or broth, and bring to a boil.
- 3 Simmer until water is absorbed and quinoa is tender, 10-20 minutes. Set aside to cool uncovered.
- 4 Microwave green beans until just tender, then rinse in cold water to stop cooking.
- 5 In a large bowl, combine quinoa, olive oil, sesame oil, green beans, lemon juice, soy sauce, and ginger. Stir well.
- 6 Season with salt and pepper. Serve at room temperature.
