Sesame Ginger Quinoa Salad With Green Beans

Ingredients

  • 1 cup quinoa
  • 1 1/2 cups water or broth
  • 2 1/2 cups green beans
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 tablespoon olive oil or cooking oil
  • 2 tablespoons sesame oil
  • 1/4 teaspoon soy sauce, reduced sodium
  • ground ginger
  • salt and pepper

Method

  1. 1 Toast quinoa in a dry skillet over medium heat, stirring constantly for about 3 minutes.
  2. 2 Transfer quinoa to a medium pot, add water or broth, and bring to a boil.
  3. 3 Simmer until water is absorbed and quinoa is tender, 10-20 minutes. Set aside to cool uncovered.
  4. 4 Microwave green beans until just tender, then rinse in cold water to stop cooking.
  5. 5 In a large bowl, combine quinoa, olive oil, sesame oil, green beans, lemon juice, soy sauce, and ginger. Stir well.
  6. 6 Season with salt and pepper. Serve at room temperature.
