Seafood Bouillabaisse On Toast
Ingredients
- 3 lbs fish (cod, halibut, bluefish), bones removed and cut into pieces
- 1 lb cooked lobster meat or 2 crabs
- 6 shrimps
- 1/2 cup olive oil
- 1 lemon, sliced
- 2 tomatoes
- 1 onion
- 1 carrot, sliced
- Pinch of saffron
- 1 bunch parsley
- 1 bay leaf
- 1 clove garlic
- 1 cup soup stock
- 1 glass wine or cider
- Toast slices for serving
Method
- 1 Place fish, lobster, shrimps, olive oil, lemon, tomatoes, onion, carrot, saffron, parsley, bay leaf, and garlic in a casserole.
- 2 Cook for 10 minutes, stirring frequently.
- 3 Add soup stock and wine or cider. Cook for 15 minutes longer.
- 4 Remove to a hot bowl. Line the casserole with toast slices and pour the bouillabaisse back over the toast. Serve immediately.
