Scrambled Eggs With Sautéed Greens
Ingredients
- 2 eggs
- 1 ounce butter
- ½ pound cooked greens of any kind
- Salt and pepper to taste
Method
- 1 Dissolve the butter in a small stewpan.
- 2 Beat the eggs and add them to the butter, stirring over the fire until the sauce thickens. Do not allow it to boil.
- 3 Add the finely chopped greens and seasoning if required. Stir over gentle heat for two or three minutes.
