Scrambled Eggs With Sautéed Greens

Ingredients

  • 2 eggs
  • 1 ounce butter
  • ½ pound cooked greens of any kind
  • Salt and pepper to taste

Method

  1. 1 Dissolve the butter in a small stewpan.
  2. 2 Beat the eggs and add them to the butter, stirring over the fire until the sauce thickens. Do not allow it to boil.
  3. 3 Add the finely chopped greens and seasoning if required. Stir over gentle heat for two or three minutes.
