Scrambled Eggs With Fried Apples
Ingredients
- 12 large eggs
- 1/2 cup heavy cream
- 2-3 tbsp granulated sugar
- 1/4 tsp freshly grated nutmeg
- 1 pinch ground mace
- 1 tsp rose water
- 2 large apples (such as Pippin or Granny Smith), sliced into rounds through the core
- 3 tbsp unsalted butter, divided
- 1 orange, juiced
- Additional sugar to taste
Method
- 1 In a bowl, beat the eggs with cream, sugar, nutmeg, mace, and rose water until well combined.
- 2 Heat 1 tablespoon of butter in a large frying pan over medium heat. Add apple slices and fry until golden on both sides. Remove apples and set aside.
- 3 Add 1 tablespoon of fresh butter to the pan. Pour in half of the egg mixture and stir constantly until just set, resembling a soft scramble.
- 4 Transfer the cooked eggs to a serving dish. Add the remaining 1 tablespoon of butter to the pan and cook the rest of the egg mixture similarly.
- 5 Arrange the fried apple slices around the edge of the dish. Place the second batch of eggs on top. Drizzle with orange juice and sprinkle with additional sugar before serving.
