Scotch Oat Bread
Ingredients
- 1 cup scalded milk, cooled to 80°F
- 1 cup water, 80°F
- ½ cup syrup
- 2 tsp salt
- 1 cake yeast
- 4 cups flour
- 2 cups rolled oats
- 2 cups flour
- melted shortening, for greasing and brushing
Method
- 1 In a bowl, combine scalded milk, water, syrup, and salt. Crumble in yeast and mix until dissolved.
- 2 Add 4 cups flour and beat to mix. Let the sponge rise for 2½ hours.
- 3 Stir in 2 cups rolled oats and 2 cups flour. Knead until smooth and elastic.
- 4 Place dough in a greased bowl, turning to coat. Let rise for 1¾ hours, then punch down.
- 5 Turn over and let rise for 1 hour. Shape into loaves and place in greased pans.
- 6 Brush tops with melted shortening. Let rise 40 minutes, then bake in a hot oven (425°F).
