Scotch Oat Bread

Ingredients

  • 1 cup scalded milk, cooled to 80°F
  • 1 cup water, 80°F
  • ½ cup syrup
  • 2 tsp salt
  • 1 cake yeast
  • 4 cups flour
  • 2 cups rolled oats
  • 2 cups flour
  • melted shortening, for greasing and brushing

Method

  1. 1 In a bowl, combine scalded milk, water, syrup, and salt. Crumble in yeast and mix until dissolved.
  2. 2 Add 4 cups flour and beat to mix. Let the sponge rise for 2½ hours.
  3. 3 Stir in 2 cups rolled oats and 2 cups flour. Knead until smooth and elastic.
  4. 4 Place dough in a greased bowl, turning to coat. Let rise for 1¾ hours, then punch down.
  5. 5 Turn over and let rise for 1 hour. Shape into loaves and place in greased pans.
  6. 6 Brush tops with melted shortening. Let rise 40 minutes, then bake in a hot oven (425°F).
