Schmierkase And Cress Finger Sandwiches

Ingredients

  • 1/2 lb schmierkase (Swiss cheese)
  • 4 tbsp heavy cream
  • 2 tbsp melted butter
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • White bread slices
  • Pumpernickel or rye bread slices
  • Fresh cress (for garnish)

Method

  1. 1 Place schmierkase in a bowl and rub until perfectly smooth.
  2. 2 Add cream, melted butter, salt, and pepper gradually, mixing well to form a spread.
  3. 3 Butter slices of white bread and trim off crusts.
  4. 4 Spread a layer of cheese mixture on the buttered bread.
  5. 5 Top with a thin layer of pumpernickel or rye bread, then another thin layer of cheese.
  6. 6 Cover with another slice of buttered white bread and press lightly together.
  7. 7 Cut into finger-shaped sandwiches and garnish with fresh cress before serving.
