Scalloped Potatoes And Eggs
Ingredients
- 6 medium potatoes
- 4 eggs
- 1 heaping tbsp butter
- 1 rounding tbsp flour
- 1 ½ cups milk
- Salt to taste
- Buttered bread crumbs
Method
- 1 Boil potatoes in salted water until tender. Boil eggs for one hour, then cool and peel.
- 2 Melt butter in a saucepan, stir in flour to make a roux, then whisk in milk and salt. Cook until thickened.
- 3 Slice potatoes and eggs. Layer them in a baking dish and pour the cream sauce over them.
- 4 Top with buttered bread crumbs. Bake at 350°F for 45 minutes until golden brown.
