Scalloped Potatoes And Eggs

Ingredients

  • 6 medium potatoes
  • 4 eggs
  • 1 heaping tbsp butter
  • 1 rounding tbsp flour
  • 1 ½ cups milk
  • Salt to taste
  • Buttered bread crumbs

Method

  1. 1 Boil potatoes in salted water until tender. Boil eggs for one hour, then cool and peel.
  2. 2 Melt butter in a saucepan, stir in flour to make a roux, then whisk in milk and salt. Cook until thickened.
  3. 3 Slice potatoes and eggs. Layer them in a baking dish and pour the cream sauce over them.
  4. 4 Top with buttered bread crumbs. Bake at 350°F for 45 minutes until golden brown.
