Scalloped Oysters With Breadcrumbs

Ingredients

  • Oysters in their liquor
  • Butter
  • Fine breadcrumbs
  • Optional: Essence of anchovy, ketchup, cayenne, grated lemon peel, mace

Method

  1. 1 Stew oysters slowly in their own liquor for 2-3 minutes, then remove with a spoon.
  2. 2 Skim the oyster liquor and melt butter in a stewpan.
  3. 3 Add breadcrumbs to the melted butter until dry, then stir in the oyster liquor and boil.
  4. 4 Butter scallop shells and coat with breadcrumbs.
  5. 5 Layer oysters and breadcrumb mixture in shells, moisten with reserved liquor, top with breadcrumbs and small bits of butter.
  6. 6 Brown in a Dutch oven or hot oven.
