Scalloped Oysters With Breadcrumbs
Ingredients
- Oysters in their liquor
- Butter
- Fine breadcrumbs
- Optional: Essence of anchovy, ketchup, cayenne, grated lemon peel, mace
Method
- 1 Stew oysters slowly in their own liquor for 2-3 minutes, then remove with a spoon.
- 2 Skim the oyster liquor and melt butter in a stewpan.
- 3 Add breadcrumbs to the melted butter until dry, then stir in the oyster liquor and boil.
- 4 Butter scallop shells and coat with breadcrumbs.
- 5 Layer oysters and breadcrumb mixture in shells, moisten with reserved liquor, top with breadcrumbs and small bits of butter.
- 6 Brown in a Dutch oven or hot oven.
