Scalloped Ham And Egg Casserole

Ingredients

  • 6 eggs
  • 2 tablespoons flour
  • 2 tablespoons butter
  • 1 pint milk
  • Salt and pepper to taste
  • 1 cup cold boiled ham, diced
  • 1/2 cup cracker crumbs
  • Butter for greasing

Method

  1. 1 Boil eggs for 10 minutes, then cool. Separate whites and yolks. Dice the ham.
  2. 2 Melt butter in a saucepan, whisk in flour, then add milk. Cook until thickened. Season with salt and pepper.
  3. 3 Chop egg whites finely. Moisten cracker crumbs with melted butter.
  4. 4 Layer half the crumbs, ham, chopped whites, thickened milk, and sifted yolks in a buttered dish.
  5. 5 Add remaining ham, whites, and milk. Top with buttered crumbs and bake at 350°F until browned.
