Scalloped Ham And Egg Casserole
Ingredients
- 6 eggs
- 2 tablespoons flour
- 2 tablespoons butter
- 1 pint milk
- Salt and pepper to taste
- 1 cup cold boiled ham, diced
- 1/2 cup cracker crumbs
- Butter for greasing
Method
- 1 Boil eggs for 10 minutes, then cool. Separate whites and yolks. Dice the ham.
- 2 Melt butter in a saucepan, whisk in flour, then add milk. Cook until thickened. Season with salt and pepper.
- 3 Chop egg whites finely. Moisten cracker crumbs with melted butter.
- 4 Layer half the crumbs, ham, chopped whites, thickened milk, and sifted yolks in a buttered dish.
- 5 Add remaining ham, whites, and milk. Top with buttered crumbs and bake at 350°F until browned.
