Scalloped Brussels Sprouts With White Sauce

Ingredients

  • 1 quart Brussels sprouts
  • 3 tablespoons butter
  • 2 tablespoons flour
  • 1 teaspoon salt
  • 2 cups milk
  • 1 cup buttered breadcrumbs

Method

  1. 1 Remove outer leaves from sprouts and soak in cold salted water for 1 hour to remove bugs.
  2. 2 Cover sprouts with boiling water, add 1 tsp salt per quart, and boil uncovered until tender. Drain.
  3. 3 Melt 2 tablespoons butter, whisk in flour, salt, and milk to make a white sauce.
  4. 4 Melt remaining 1 tablespoon butter and toss with breadcrumbs.
  5. 5 Layer half the crumbs, half the sprouts, remaining crumbs, and remaining sprouts in a baking dish.
  6. 6 Pour sauce over sprouts, top with remaining crumbs, and bake until crumbs are brown.
