Scalded Milk Whole Wheat Rolls

Ingredients

  • 1 tsp salt
  • 1 tsp sugar
  • 1 tbsp butter
  • 1 cake compressed yeast
  • 1 cup scalded milk
  • 3 cups whole wheat flour
  • 2 tbsp warm water
  • 1 egg white
  • 1 tsp milk

Method

  1. 1 Add salt, sugar, and butter to scalded milk. Dissolve yeast in warm water and add to milk when cooled.
  2. 2 Add half the flour and beat hard for 10 minutes. Work in the rest of the flour.
  3. 3 Set dough to rise for 2 hours.
  4. 4 Roll out into a 1-inch thick sheet and cut into small rolls. Place close together in a buttered pan.
  5. 5 Let rise 15-30 minutes. Bake in a quick oven (425°F) for 15-20 minutes.
  6. 6 About 10 minutes before baking ends, brush with egg white beaten with a little milk for a glossy surface.
