Scalded Milk Whole Wheat Rolls
Ingredients
- 1 tsp salt
- 1 tsp sugar
- 1 tbsp butter
- 1 cake compressed yeast
- 1 cup scalded milk
- 3 cups whole wheat flour
- 2 tbsp warm water
- 1 egg white
- 1 tsp milk
Method
- 1 Add salt, sugar, and butter to scalded milk. Dissolve yeast in warm water and add to milk when cooled.
- 2 Add half the flour and beat hard for 10 minutes. Work in the rest of the flour.
- 3 Set dough to rise for 2 hours.
- 4 Roll out into a 1-inch thick sheet and cut into small rolls. Place close together in a buttered pan.
- 5 Let rise 15-30 minutes. Bake in a quick oven (425°F) for 15-20 minutes.
- 6 About 10 minutes before baking ends, brush with egg white beaten with a little milk for a glossy surface.
