Scalded Milk Double Boiler Hot Cocoa

Ingredients

  • 4 cups milk
  • 3 level tablespoons cocoa powder
  • ¼ cup sugar
  • Few grains salt
  • ¾ cup boiling water
  • Whipped cream for serving

Method

  1. 1 Heat milk to scalding point in a double boiler or over hot water.
  2. 2 Mix cocoa, sugar, and salt into a paste with a little of the hot milk.
  3. 3 Stir in boiling water and boil for one minute.
  4. 4 Add mixture to hot milk and beat for two minutes.
  5. 5 Serve topped with a tablespoon of beaten or whipped cream.
