Scalded Milk Cornmeal Muffins With Beaten Egg Whites
Ingredients
- 1 pint milk
- 1/2 pint cornmeal
- 4 eggs
- 1 tablespoon butter
- salt to taste
- 1 teaspoon sugar
Method
- 1 Pour boiling milk over the cornmeal and let it cool slightly.
- 2 Stir in melted butter, salt, sugar, and egg yolks.
- 3 Fold in well-beaten egg whites until just combined.
- 4 Bake in a hot oven (425°F) until golden brown.
