Scalded Cornmeal Drop Biscuits With Eggs

Ingredients

  • 1 cup cornmeal
  • 1 cup hot water
  • 2 tsp butter
  • 2 eggs
  • ¼ cup cream or milk
  • salt

Method

  1. 1 Scald 1 cup cornmeal with 1 cup hot water.
  2. 2 Rub in 2 tsp butter, 2 beaten eggs, ¼ cup cream or milk, and salt.
  3. 3 Butter a tin pan and drop mixture from a spoon onto it.
  4. 4 Bake in a moderate oven (350°F) until set.
