Scalded Cornmeal Drop Biscuits With Eggs
Ingredients
- 1 cup cornmeal
- 1 cup hot water
- 2 tsp butter
- 2 eggs
- ¼ cup cream or milk
- salt
Method
- 1 Scald 1 cup cornmeal with 1 cup hot water.
- 2 Rub in 2 tsp butter, 2 beaten eggs, ¼ cup cream or milk, and salt.
- 3 Butter a tin pan and drop mixture from a spoon onto it.
- 4 Bake in a moderate oven (350°F) until set.
