Savoy Sponge Cake

Ingredients

  • 1 cup finely sifted sugar
  • 4 egg yolks
  • 1 ½ cups fine dry sifted flour
  • 4 egg whites
  • Butter and sifted sugar for greasing pan

Method

  1. 1 Beat 1 cup finely sifted sugar with 4 egg yolks until thick.
  2. 2 Lightly stir in 1 ½ cups fine dry sifted flour.
  3. 3 Fold in 4 egg whites beaten to a very strong froth.
  4. 4 Pour into a buttered and sugared tin (no more than half full).
  5. 5 Bake for 30 minutes.
