Savory Mushroom Barley Soup

Ingredients

  • 1 tablespoon oil
  • 1 chopped onion
  • 2 thinly sliced celery stalks
  • 2 thinly sliced carrots
  • 1/2 cup sliced mushrooms
  • 1 teaspoon quick-cooking barley
  • 1/2 teaspoon garlic powder
  • 3 teaspoons ground thyme
  • 2 cups low-sodium chicken broth
  • 1 cup water
  • 1 tablespoon chopped fresh parsley

Method

  1. 1 Heat oil in a large soup pot over high heat. Sauté onion, celery, carrots, and mushrooms until golden, about 4 minutes.
