Savory Herb And Shallot Pancakes
Ingredients
- 2 eggs
- 2 ounces flour
- ½ pint milk
- ½ teaspoon grated lemon rind
- ½ teaspoon salt
- ½ teaspoon mixed sweet herbs
- 1 shallot or small onion, finely minced
- A shake of pepper
- Butter for frying
Method
- 1 Combine flour, herbs, salt, lemon rind, pepper, and finely minced shallot in a basin.
- 2 Beat eggs and milk together, then pour into the dry ingredients, stirring until smooth and lump-free.
- 3 Heat butter in a small frying pan over medium-high heat. Pour in enough batter to cover the bottom.
- 4 Cook until browned on the underside, loosen edges with a knife, then flip and brown the other side.
- 5 Fold the pancake and serve immediately on a hot dish.
