Ingredients

  • 2 eggs
  • 2 ounces flour
  • ½ pint milk
  • ½ teaspoon grated lemon rind
  • ½ teaspoon salt
  • ½ teaspoon mixed sweet herbs
  • 1 shallot or small onion, finely minced
  • A shake of pepper
  • Butter for frying

Method

  1. 1 Combine flour, herbs, salt, lemon rind, pepper, and finely minced shallot in a basin.
  2. 2 Beat eggs and milk together, then pour into the dry ingredients, stirring until smooth and lump-free.
  3. 3 Heat butter in a small frying pan over medium-high heat. Pour in enough batter to cover the bottom.
  4. 4 Cook until browned on the underside, loosen edges with a knife, then flip and brown the other side.
