Sautéed Zucchini With Tomatoes

Ingredients

  • 1/4 cup butter or cooking oil
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 2 pounds zucchini, sliced
  • 1/4 cup diced tomatoes (peeled) or 16 oz can diced tomatoes, drained
  • 1 tsp salt
  • black pepper to taste
  • 1 tsp sugar

Method

  1. 1 Wash hands. Melt butter or oil in a saucepan over medium heat.
  2. 2 Add onion and garlic; cook until tender, about 5 to 7 minutes.
  3. 3 Add zucchini, tomatoes, salt, pepper, and sugar. Cover and reduce heat.
  4. 4 Cook until vegetables are tender, stirring occasionally.
