Ingredients

  • 1 tablespoon vegetable oil
  • 1 medium onion, peeled and chopped
  • 1 medium yellow squash, cut into small pieces
  • 1 medium zucchini, cut into small pieces
  • 1/2 red pepper, chopped into small pieces
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon basil
  • 1/4 teaspoon oregano

Method

  1. 1 Peel and chop the onion. Cut the yellow squash, zucchini, and red pepper into small pieces.
  2. 2 Heat vegetable oil in a frying pan over medium heat. Add the onion and cook for 1 minute, stirring quickly.
  3. 3 Add black pepper, basil, and oregano; stir a few times. Add remaining vegetables and cook for 3 to 5 minutes until tender.
