Sautéed Vegetable Tacos

Ingredients

  • 1 onion, diced
  • 1 clove garlic, minced
  • 1 jalapeno pepper, diced
  • 1 tsp cumin
  • Salt and black pepper to taste
  • 1 red pepper, diced
  • Mushrooms, sliced
  • Corn tortillas
  • Tomatoes, cut
  • Cilantro or cilantro sauce

Method

  1. 1 Wash hands with soap and water.
  2. 2 Sauté onion, garlic, and jalapeno. Add cumin, salt, and black pepper.
  3. 3 When vegetables are soft, add red pepper and mushrooms. Sauté for 2 more minutes.
  4. 4 Serve the mixture over tortillas and garnish with tomatoes and cilantro or cilantro sauce.
