Sautéed Vegetable Tacos
Ingredients
- 1 onion, diced
- 1 clove garlic, minced
- 1 jalapeno pepper, diced
- 1 tsp cumin
- Salt and black pepper to taste
- 1 red pepper, diced
- Mushrooms, sliced
- Corn tortillas
- Tomatoes, cut
- Cilantro or cilantro sauce
Method
- 1 Wash hands with soap and water.
- 2 Sauté onion, garlic, and jalapeno. Add cumin, salt, and black pepper.
- 3 When vegetables are soft, add red pepper and mushrooms. Sauté for 2 more minutes.
- 4 Serve the mixture over tortillas and garnish with tomatoes and cilantro or cilantro sauce.
