Sautéed Veal Liver With Onion Gravy

Ingredients

  • 1 scallion or 1 onion, chopped fine
  • Oil and butter
  • Veal liver, sliced thin
  • Salt
  • Pepper
  • Pinch of chopped parsley
  • Lemon juice

Method

  1. 1 Chop the scallion or onion finely. Brown it in oil and butter over medium heat until it turns a dark red color.
  2. 2 Add the thin slices of veal liver to the pan. Cook until half done, then season with salt, pepper, and a pinch of chopped parsley.
  3. 3 Simmer on low heat until cooked through, allowing the juices to form a gravy. Serve in the gravy with a squeeze of lemon juice.
