Sautéed Summer Squash With Tomatoes And Parmesan
Ingredients
- 1 small onion
- 1 1/2 tablespoons olive oil or canola oil
- 1 1/2 cups yellow summer squash, sliced
- 1/4 cup zucchini, sliced
- 1 can (14.5 ounces) diced Italian tomatoes
- 2 tablespoons Parmesan cheese, grated
- Garlic powder, salt, and pepper to taste
Method
- 1 Heat olive oil in a large skillet over medium heat.
- 2 Add sliced onion and squash; cook for 10 minutes, stirring often, until tender.
- 3 Stir in diced tomatoes and simmer for 5 minutes.
- 4 Season with garlic powder, salt, and pepper to taste.
- 5 Serve warm, topped with grated Parmesan cheese.
