Sautéed Summer Squash And Carrots
Ingredients
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cups summer squash, sliced
- 1 cup carrots, thinly sliced
- seasonings to taste
Method
- 1 Heat olive oil in a large skillet over medium-high heat.
- 2 Add chopped onion and stir-fry until clear and beginning to brown.
- 3 Add sliced carrots and stir until tender-crisp, then add squash and cook for 2 minutes.
- 4 Lower heat, add seasonings, and cook for 2 more minutes. Serve immediately.
