Sautéed Mashed Potato Cakes
Ingredients
- 1 ½ cups mashed potato
- 1 egg
- flour for rolling
- butter for sautéing or greasing mold
Method
- 1 Beat the egg and mashed potato together until light and well combined.
- 2 Choose a method: form into balls, roll in flour and sauté in butter; cut into strips/squares and sauté; or press into a buttered mold.
- 3 If using a mold, cover with greased paper and bake in a moderate oven (350°F) for 30 minutes.
- 4 Let stand in the mold for 10 minutes, then turn onto a dish.
- 5 Fill the center with mince or creamed fish before serving.
