Sautéed Green Beans With Tomatoes And Basil

Ingredients

  • 1 pound green beans, ends snipped
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 1 can (14.5 ounce) tomatoes, drained and chopped
  • 1 tablespoon fresh basil (or 1/2 teaspoon dried)
  • 1 tablespoon fresh parsley (or 1/2 teaspoon dried)
  • Salt and pepper to taste

Method

  1. 1 Cook beans in boiling water for 5 minutes until crisp. Drain and rinse under cold water. Set aside.
  2. 2 Heat olive oil in a large frying pan over medium heat. Add onion and cook for 2-3 minutes until softened.
  3. 3 Add tomatoes, basil, and parsley. Cook for 3 minutes to combine flavors.
  4. 4 Stir beans into the pan and cook for 5-6 minutes. Season with salt and pepper to taste.
