Sautéed Cauliflower With Tomatoes And Parmesan

Ingredients

  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 1/4 teaspoon garlic powder
  • 1 head cauliflower, cut into 2-inch pieces
  • 2 large tomatoes, chopped
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon dried parsley
  • 1/4 cup grated Parmesan cheese

Method

  1. 1 Chop the cauliflower into 2-inch pieces.
  2. 2 Peel and chop the onion into small pieces.
  3. 3 Chop the tomatoes into small pieces.
  4. 4 Place cauliflower in a pan with 1 inch of water. Boil over medium heat for 3 minutes, then drain.
  5. 5 Heat oil in a large pan. Sauté onion over medium heat for 3-5 minutes.
  6. 6 Add garlic powder and cauliflower. Cook, stirring, for 3 minutes until lightly browned.
  7. 7 Stir in tomatoes and black pepper. Cook for 5 more minutes.
  8. 8 Serve sprinkled with dried parsley and Parmesan cheese.
