Sautéed Cauliflower With Tomatoes And Parmesan
Ingredients
- 1 tablespoon vegetable oil
- 1 medium onion, chopped
- 1/4 teaspoon garlic powder
- 1 head cauliflower, cut into 2-inch pieces
- 2 large tomatoes, chopped
- 1/2 teaspoon ground black pepper
- 1 tablespoon dried parsley
- 1/4 cup grated Parmesan cheese
Method
- 1 Chop the cauliflower into 2-inch pieces.
- 2 Peel and chop the onion into small pieces.
- 3 Chop the tomatoes into small pieces.
- 4 Place cauliflower in a pan with 1 inch of water. Boil over medium heat for 3 minutes, then drain.
- 5 Heat oil in a large pan. Sauté onion over medium heat for 3-5 minutes.
- 6 Add garlic powder and cauliflower. Cook, stirring, for 3 minutes until lightly browned.
- 7 Stir in tomatoes and black pepper. Cook for 5 more minutes.
- 8 Serve sprinkled with dried parsley and Parmesan cheese.
