Sautéed Cauliflower Rice With Lemon
Ingredients
- 1 tablespoon vegetable oil
- 1/2 cup diced onion
- 1 clove garlic, minced
- 4 to 5 cups cauliflower, grated or finely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon lemon juice or lime juice (optional)
- 2 tablespoons chopped fresh parsley or cilantro (optional)
Method
- 1 Heat oil in a large skillet over medium heat. Add onion and cook until soft, 3 to 5 minutes.
- 2 Add garlic, cauliflower, salt, and pepper. Stir until cauliflower is tender, 3 to 5 minutes.
- 3 Stir in lemon juice and sprinkle with parsley or cilantro if desired. Serve warm.
