Sausage Stuffed Flank Steak With Mushroom Gravy
Ingredients
- 1 large flank steak
- Sausage meat
- Bread crumbs
- Minced onion
- Thyme
- Stock or water
- Flour
- Butter or fat
- Mushroom catsup
Method
- 1 Pound the flank steak flat. Prepare stuffing by mixing equal parts sausage meat and bread crumbs with minced onion and thyme.
- 2 Spread stuffing over steak, roll up tightly, and tie with kitchen twine to hold shape.
- 3 Brown the rolled steak in hot fat in a large pot. Pour in stock or water to cover, cover pot, and simmer for 2 hours.
- 4 Remove steak. Skim and strain the cooking liquid. Brown flour in butter or fat, whisk into liquid to thicken, and season with mushroom catsup.
- 5 Slice the steak and serve with the gravy poured over or on the side.
