Sausage And Summer Squash Casserole
Ingredients
- 1 pound ground sausage
- 1 small onion, diced
- 3 small zucchinis, diced
- 3 small yellow squashes, diced
- 1 medium potato, peeled and diced
- 1 can (14.5 oz) low-sodium Italian stewed tomatoes
Method
- 1 Preheat oven to 350°F.
- 2 Brown sausage and diced onion in a skillet; drain excess fat.
- 3 Combine sausage, onion, diced zucchinis, yellow squashes, potato, and stewed tomatoes in a casserole dish.
- 4 Cover with foil and bake at 350°F for 45 minutes.
