Sardines With Tarragon Mustard Sauce

Ingredients

  • 1 dozen sardines
  • Butter or oil
  • Bread slices, cut into shapes
  • 4 egg yolks, well-beaten
  • 1 tsp tarragon vinegar
  • 1 tsp cider vinegar
  • 1 tsp prepared mustard
  • 1/4 tsp salt
  • 1 tbsp butter
  • Olives (optional)

Method

  1. 1 Remove skins and tails from sardines. Heat them in the oven until warmed through.
  2. 2 Heat butter or oil in a chafing dish blazer. Sauté bread pieces until golden and crisp.
  3. 3 In a separate blazer over hot water, whisk egg yolks, tarragon vinegar, cider vinegar, mustard, salt, and butter.
  4. 4 Stir the sauce constantly until thick. Place sardines on the bread and pour the sauce over them. Serve with olives.
