Sardines With Tarragon Mustard Sauce
Ingredients
- 1 dozen sardines
- Butter or oil
- Bread slices, cut into shapes
- 4 egg yolks, well-beaten
- 1 tsp tarragon vinegar
- 1 tsp cider vinegar
- 1 tsp prepared mustard
- 1/4 tsp salt
- 1 tbsp butter
- Olives (optional)
Method
- 1 Remove skins and tails from sardines. Heat them in the oven until warmed through.
- 2 Heat butter or oil in a chafing dish blazer. Sauté bread pieces until golden and crisp.
- 3 In a separate blazer over hot water, whisk egg yolks, tarragon vinegar, cider vinegar, mustard, salt, and butter.
- 4 Stir the sauce constantly until thick. Place sardines on the bread and pour the sauce over them. Serve with olives.
