Sardine Yolk Stuffed Eggs With Celery Salad

Ingredients

  • 3 eggs
  • 4 sardines
  • Salt and pepper to taste
  • Cream or oil
  • 2 stalks celery, finely cut
  • Mayonnaise
  • Lettuce leaves

Method

  1. 1 Boil eggs hard, cut in half lengthwise, and remove yolks.
  2. 2 Rub yolks through a sieve with sardines, season with salt and pepper, and add enough cream or oil to form a paste. Shape into balls.
  3. 3 Shred egg whites with scissors and mix with finely cut celery.
  4. 4 Toss celery and egg whites with mayonnaise, arrange on lettuce, and top with the sardine-yolk balls.
