Sardine Yolk Stuffed Eggs With Celery Salad
Ingredients
- 3 eggs
- 4 sardines
- Salt and pepper to taste
- Cream or oil
- 2 stalks celery, finely cut
- Mayonnaise
- Lettuce leaves
Method
- 1 Boil eggs hard, cut in half lengthwise, and remove yolks.
- 2 Rub yolks through a sieve with sardines, season with salt and pepper, and add enough cream or oil to form a paste. Shape into balls.
- 3 Shred egg whites with scissors and mix with finely cut celery.
- 4 Toss celery and egg whites with mayonnaise, arrange on lettuce, and top with the sardine-yolk balls.
