Sardine Cucumber Tomato Sandwich
Ingredients
- 8 slices whole-wheat or multigrain bread, toasted
- 2 cucumbers, thinly sliced
- 1 can (4 oz) sardines, water-packed, drained
- 1 tablespoon lemon juice
- 1 large tomato, thinly sliced
- 1 red or white onion, thinly sliced
Method
- 1 Place 4 slices of toasted bread on a cutting board.
- 2 Arrange cucumber slices on top of each bread slice.
- 3 Distribute sardines evenly over the cucumbers and gently mash with a fork.
- 4 Spread mashed sardines to cover the cucumber, then squeeze lemon juice over them.
- 5 Layer tomato slices and onion on top, then cover with remaining bread slices.
- 6 Press down gently, cut in half, and serve immediately.
