Sardine Cucumber Tomato Sandwich

Ingredients

  • 8 slices whole-wheat or multigrain bread, toasted
  • 2 cucumbers, thinly sliced
  • 1 can (4 oz) sardines, water-packed, drained
  • 1 tablespoon lemon juice
  • 1 large tomato, thinly sliced
  • 1 red or white onion, thinly sliced

Method

  1. 1 Place 4 slices of toasted bread on a cutting board.
  2. 2 Arrange cucumber slices on top of each bread slice.
  3. 3 Distribute sardines evenly over the cucumbers and gently mash with a fork.
  4. 4 Spread mashed sardines to cover the cucumber, then squeeze lemon juice over them.
  5. 5 Layer tomato slices and onion on top, then cover with remaining bread slices.
  6. 6 Press down gently, cut in half, and serve immediately.
