Sardine Butter Spread On Brown Bread
Ingredients
- 2 ounces butter, softened
- Salt to taste
- Nutmeg to taste
- Nepaul pepper to taste
- 2 teaspoons tomato catsup
- Few drops lemon juice
- 3 sardines, skin and backbone removed
- Brown bread, sliced into fingers
- Butter for bread
- Fine cress
Method
- 1 Beat the softened butter until smooth. Mix in salt, nutmeg, Nepaul pepper, tomato catsup, and lemon juice.
- 2 Pound the cleaned sardines into a paste in a mortar, then blend thoroughly with the seasoned butter.
- 3 Pass the sardine mixture through a wire sieve to ensure a smooth texture.
- 4 Spread the mixture thickly on buttered finger-shaped pieces of brown bread. Top with fine cress and close sandwiches.
