Sardine And Egg Yolk Spread
Ingredients
- 2 hard-boiled egg yolks
- 2 oz sardine fillets, skin and bones removed
- A few drops Tabasco sauce
- Lemon juice to taste
- Bread or crackers
- Lemon slices and parsley for garnish
Method
- 1 Rub the hard-boiled egg yolks into a smooth paste.
- 2 Pound the sardine flesh until smooth, then mix thoroughly with the egg yolk paste.
- 3 Season the mixture with Tabasco sauce and lemon juice to taste.
- 4 Spread the mixture onto bread or crackers just before serving.
- 5 Garnish with lemon slices and parsley.
