Ingredients

  • 2 hard-boiled egg yolks
  • 2 oz sardine fillets, skin and bones removed
  • A few drops Tabasco sauce
  • Lemon juice to taste
  • Bread or crackers
  • Lemon slices and parsley for garnish

Method

  1. 1 Rub the hard-boiled egg yolks into a smooth paste.
  2. 2 Pound the sardine flesh until smooth, then mix thoroughly with the egg yolk paste.
  3. 3 Season the mixture with Tabasco sauce and lemon juice to taste.
  4. 4 Spread the mixture onto bread or crackers just before serving.
  5. 5 Garnish with lemon slices and parsley.
