Sardine And Egg Canapes
Ingredients
- sardines, drained, skinned, and boned
- melted butter
- lemon juice
- small circles of bread
- hard-boiled eggs, separated into whites and yolks
- minced olives
- cress or parsley for garnish
Method
- 1 Drain, skin, and bone the sardines, then mash them into a smooth paste. Moisten with melted butter and lemon juice.
- 2 Spread the sardine paste onto small circles of bread.
- 3 Lay a ring of minced hard-boiled egg white in the center of each canapé.
- 4 Fill the center of the egg white ring with minced olives and surround with sifted hard-boiled egg yolk.
- 5 Garnish with cress or parsley and serve immediately.
