Sardine And Egg Canapes

Ingredients

  • sardines, drained, skinned, and boned
  • melted butter
  • lemon juice
  • small circles of bread
  • hard-boiled eggs, separated into whites and yolks
  • minced olives
  • cress or parsley for garnish

Method

  1. 1 Drain, skin, and bone the sardines, then mash them into a smooth paste. Moisten with melted butter and lemon juice.
  2. 2 Spread the sardine paste onto small circles of bread.
  3. 3 Lay a ring of minced hard-boiled egg white in the center of each canapé.
  4. 4 Fill the center of the egg white ring with minced olives and surround with sifted hard-boiled egg yolk.
  5. 5 Garnish with cress or parsley and serve immediately.
