Sardine And Anchovy Potato Salad

Ingredients

  • 4 sardines
  • 3 large potatoes
  • 3 eggs
  • 4 anchovies
  • ½ cup cooked lima beans
  • Oil and vinegar
  • 1 egg yolk
  • Pinch of mustard
  • Pinch of salt
  • Stoned olives

Method

  1. 1 Bake potatoes until tender, peel, and cool. Boil eggs hard.
  2. 2 Slice potatoes into a bowl and add cooked lima beans.
  3. 3 Skin and bone sardines and anchovies; break into bits and mix with vegetables.
  4. 4 Whisk one egg yolk with mustard, salt, oil, and vinegar to make a dressing.
  5. 5 Pour dressing over salad, top with shredded egg whites, sliced hard-boiled egg, and olives.
