Sardine And Anchovy Potato Salad
Ingredients
- 4 sardines
- 3 large potatoes
- 3 eggs
- 4 anchovies
- ½ cup cooked lima beans
- Oil and vinegar
- 1 egg yolk
- Pinch of mustard
- Pinch of salt
- Stoned olives
Method
- 1 Bake potatoes until tender, peel, and cool. Boil eggs hard.
- 2 Slice potatoes into a bowl and add cooked lima beans.
- 3 Skin and bone sardines and anchovies; break into bits and mix with vegetables.
- 4 Whisk one egg yolk with mustard, salt, oil, and vinegar to make a dressing.
- 5 Pour dressing over salad, top with shredded egg whites, sliced hard-boiled egg, and olives.
