Salvadoran Cabbage Slaw

Ingredients

  • 1 head cabbage, chopped
  • 2 medium carrots, grated
  • 1 small onion, sliced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon oregano
  • 1/2 teaspoon olive oil
  • 1 teaspoon salt
  • 1/4 cup brown sugar
  • 1/2 cup vinegar
  • water

Method

  1. 1 Blanch the chopped cabbage in boiling water for 1 minute, then discard the water.
  2. 2 Place the blanched cabbage in a large bowl and add grated carrots, sliced onion, red pepper flakes, oregano, olive oil, salt, brown sugar, vinegar, and water.
  3. 3 Toss to combine, then refrigerate for at least 2 hours before serving.
