Salvadoran Cabbage Slaw
Ingredients
- 1 head cabbage, chopped
- 2 medium carrots, grated
- 1 small onion, sliced
- 1/2 teaspoon red pepper flakes (optional)
- 1 teaspoon oregano
- 1/2 teaspoon olive oil
- 1 teaspoon salt
- 1/4 cup brown sugar
- 1/2 cup vinegar
- water
Method
- 1 Blanch the chopped cabbage in boiling water for 1 minute, then discard the water.
- 2 Place the blanched cabbage in a large bowl and add grated carrots, sliced onion, red pepper flakes, oregano, olive oil, salt, brown sugar, vinegar, and water.
- 3 Toss to combine, then refrigerate for at least 2 hours before serving.
