Salt Pork Potato Soup With Dumplings
Ingredients
- ¼ to ½ lb salt pork
- 3 pints boiling water
- 2 or 3 onions, sliced thin
- 1 quart potatoes, peeled and sliced
- Pepper to taste
- 1 large spoon flour mixed with 1 cup cold water
- 1 dozen crackers, split and moistened with hot water (or ingredients for dumplings)
Method
- 1 Slice and fry the salt pork in a kettle until browned.
- 2 Drain off the fat, saving it for other shortening needs.
- 3 Add boiling water, sliced onions, and pepper to the kettle.
- 4 Let the onions boil for a few moments.
- 5 Add sliced potatoes and the flour mixture thickened with cold water.
- 6 Cook until potatoes are tender, about 15-20 minutes.
- 7 Five minutes before serving, add split crackers moistened with hot water or prepared dumplings.
