Salt Pork Potato Fish Chowder

Ingredients

  • 2-3 slices salt pork
  • 6 medium potatoes
  • 1 small onion, chopped
  • 3 lbs fresh fish
  • 2 teaspoons salt
  • 1/8 teaspoon pepper
  • 2 quarts milk
  • split pilot crackers (optional)

Method

  1. 1 Cut salt pork into small pieces and fry until crisp in a large pot. Remove pork and set aside, leaving the fat in the pot.
  2. 2 Peel and cube the potatoes. Add them to the pot with half of the chopped onion and the fried pork pieces.
  3. 3 Cut the fish into chunks and layer over the potatoes. Sprinkle with the remaining onion, salt, and pepper.
  4. 4 Add enough water to just cover the fish. Cover tightly and simmer until the potatoes are tender.
  5. 5 Pour in the milk and heat gently until it just begins to scald. Do not boil vigorously. Serve with crackers if desired.
