Salt Pork Potato Fish Chowder
Ingredients
- 2-3 slices salt pork
- 6 medium potatoes
- 1 small onion, chopped
- 3 lbs fresh fish
- 2 teaspoons salt
- 1/8 teaspoon pepper
- 2 quarts milk
- split pilot crackers (optional)
Method
- 1 Cut salt pork into small pieces and fry until crisp in a large pot. Remove pork and set aside, leaving the fat in the pot.
- 2 Peel and cube the potatoes. Add them to the pot with half of the chopped onion and the fried pork pieces.
- 3 Cut the fish into chunks and layer over the potatoes. Sprinkle with the remaining onion, salt, and pepper.
- 4 Add enough water to just cover the fish. Cover tightly and simmer until the potatoes are tender.
- 5 Pour in the milk and heat gently until it just begins to scald. Do not boil vigorously. Serve with crackers if desired.
