Salt Pork Crusted Roast Turkey
Ingredients
- 12-pound turkey
- Salt
- Flour
- Thin slices of salt pork
Method
- 1 Clean, stuff, and truss the turkey so it rests level on the wings with drumsticks close to the body.
- 2 Rub the turkey all over with salt and dredge with flour. Cover the breast with thin slices of salt pork.
- 3 Place on a rack in a baking pan. Roast in a hot oven for the first half hour to sear and brown evenly.
- 4 Lower the heat and continue cooking until the joints separate easily, about 3.5 hours total. Baste with rendered fat.
