Salt Pork And Rice Vegetable Soup

Ingredients

  • ½ lb salt pork
  • 2 quarts water
  • 1 small slice salt pork (for paste)
  • 2-3 sprigs parsley
  • 1 small piece celery
  • 1 clove garlic
  • 2 carrots, sliced
  • ¼ medium cabbage, leaves only
  • 1 handful rice per person
  • Butter
  • Seasoning

Method

  1. 1 Cut rind from salt pork and boil in 2 quarts water.
  2. 2 Beat a small slice of pork into a paste with parsley, celery, and garlic; add to pot.
  3. 3 Add sliced carrots, cabbage leaves, butter, and seasoning; boil slowly for 2½ hours.
  4. 4 In the last 30 minutes, add one handful of rice per person.
  5. 5 Remove pork when soft, slice into ribbons, and return to soup.
