Salt Pork And Pea Soup
Ingredients
- 1 cup dried peas
- 1 quart warm water
- 4 ounces salt pork
- 1 ½ cups sliced onions
- 5 pints cold water
- 1 bunch soup herbs
- ½ teaspoon poultry seasoning
- well-cracked bones from the shoulder
- 2 tablespoons finely chopped parsley
Method
- 1 Soak dried peas in warm water overnight. Drain and wash.
- 2 Mince salt pork and cook slowly with sliced onions until soft but not brown.
- 3 Add peas, cold water, soup herbs, poultry seasoning, and well-cracked bones.
- 4 Bring to a boil, then cook slowly for three and a half hours.
- 5 Cool, then strain through a coarse sieve into a bowl.
- 6 Reheat before serving and stir in chopped parsley. Thin with boiling water if needed.
