Salt Pork And Pea Soup

Ingredients

  • 1 cup dried peas
  • 1 quart warm water
  • 4 ounces salt pork
  • 1 ½ cups sliced onions
  • 5 pints cold water
  • 1 bunch soup herbs
  • ½ teaspoon poultry seasoning
  • well-cracked bones from the shoulder
  • 2 tablespoons finely chopped parsley

Method

  1. 1 Soak dried peas in warm water overnight. Drain and wash.
  2. 2 Mince salt pork and cook slowly with sliced onions until soft but not brown.
  3. 3 Add peas, cold water, soup herbs, poultry seasoning, and well-cracked bones.
  4. 4 Bring to a boil, then cook slowly for three and a half hours.
  5. 5 Cool, then strain through a coarse sieve into a bowl.
  6. 6 Reheat before serving and stir in chopped parsley. Thin with boiling water if needed.
