  • 1/4 lb salt pork, sliced
  • 1 onion, chopped
  • 1 quart green shelled kidney beans
  • 1 tbsp flour
  • 1 quart boiling water
  • 1/2 tsp pepper
  • salt to taste

Method

  1. 1 Slice salt pork and fry slowly for 10 minutes.
  2. 2 Add chopped onion and cook very slowly for 20 minutes.
  3. 3 Cover beans with boiling water and boil for 10 minutes, then drain.
  4. 4 Combine beans, flour, pork, and onion; stir over heat for 5 minutes.
  5. 5 Add boiling water and pepper, then simmer for 2 hours. Salt to taste.
