Salt Pork And Onion Stewed Kidney Beans
Ingredients
- 1/4 lb salt pork, sliced
- 1 onion, chopped
- 1 quart green shelled kidney beans
- 1 tbsp flour
- 1 quart boiling water
- 1/2 tsp pepper
- salt to taste
Method
- 1 Slice salt pork and fry slowly for 10 minutes.
- 2 Add chopped onion and cook very slowly for 20 minutes.
- 3 Cover beans with boiling water and boil for 10 minutes, then drain.
- 4 Combine beans, flour, pork, and onion; stir over heat for 5 minutes.
- 5 Add boiling water and pepper, then simmer for 2 hours. Salt to taste.
