Salt Pork And Beef Split Pea Soup

Ingredients

  • 1 gallon water
  • 1 quart split peas, soaked overnight
  • 4 ounces salt pork, cut into bits
  • 1 pound lean beef, cut into bits
  • 1 stalk celery, chopped fine
  • 3-4 slices bread
  • Butter for frying

Method

  1. 1 Combine water, soaked peas, salt pork, and beef in a large pot. Boil slowly for two hours or until liquid reduces by half.
  2. 2 Pour the mixture through a colander and press the peas through to create a smooth base. Return the liquid and peas to the pot.
  3. 3 Stir in the chopped celery and simmer briefly to blend flavors.
  4. 4 Fry bread slices in butter until quite brown, cut into squares, and serve alongside the soup.
