Salt Cod With White Sauce

Ingredients

  • Salt cod fish
  • 1 tbsp butter
  • 2 tbsp flour
  • 1 cup cold water
  • Minced parsley (optional)
  • Lemon juice (optional)
  • 1 hard-boiled egg, chopped (optional)

Method

  1. 1 Cut the fish into squares and soak overnight. In the morning, drain, rinse, cover with fresh boiling water, and simmer until tender.
  2. 2 Spread the cooked fish on a platter and place in a moderate oven (350°F) to keep warm.
  3. 3 Melt butter in a saucepan, stir in flour, and cook until the mixture leaves the sides of the pan.
  4. 4 Gradually stir in cold water and cook, stirring constantly, until the sauce is thick and smooth.
  5. 5 Pour the sauce over the cod and serve. Garnish with parsley, lemon juice, or chopped hard-boiled egg if desired.
