Salt Cod With White Sauce
Ingredients
- Salt cod fish
- 1 tbsp butter
- 2 tbsp flour
- 1 cup cold water
- Minced parsley (optional)
- Lemon juice (optional)
- 1 hard-boiled egg, chopped (optional)
Method
- 1 Cut the fish into squares and soak overnight. In the morning, drain, rinse, cover with fresh boiling water, and simmer until tender.
- 2 Spread the cooked fish on a platter and place in a moderate oven (350°F) to keep warm.
- 3 Melt butter in a saucepan, stir in flour, and cook until the mixture leaves the sides of the pan.
- 4 Gradually stir in cold water and cook, stirring constantly, until the sauce is thick and smooth.
- 5 Pour the sauce over the cod and serve. Garnish with parsley, lemon juice, or chopped hard-boiled egg if desired.
