Salt Cod Potato Hash With Crisp Salt Pork
Ingredients
- Salted codfish, cooked and flaked
- Potatoes, cooked and diced
- Salt pork, diced
- Water or stock, as needed
Method
- 1 Render diced salt pork in a skillet until crisp, then remove the scraps, leaving the fat in the pan.
- 2 Add the flaked codfish and diced potatoes to the pan with the pork fat.
- 3 Stir the mixture gently until heated through, then cook undisturbed until the bottom is well browned.
- 4 Fold the hash over itself and turn it out of the pan like an omelet to serve.
