  • Salted codfish, cooked and flaked
  • Potatoes, cooked and diced
  • Salt pork, diced
  • Water or stock, as needed

Method

  1. 1 Render diced salt pork in a skillet until crisp, then remove the scraps, leaving the fat in the pan.
  2. 2 Add the flaked codfish and diced potatoes to the pan with the pork fat.
  3. 3 Stir the mixture gently until heated through, then cook undisturbed until the bottom is well browned.
  4. 4 Fold the hash over itself and turn it out of the pan like an omelet to serve.
