Salt Cod And Mashed Potato Cakes
Ingredients
- 1 heaping cup salt codfish
- 1 heaping cup mashed potatoes
- 1 tsp flour
- 1 heaping tbsp butter
- 3 tbsp boiling water
- Salt and pepper to taste
- Flour for dredging
Method
- 1 Cut codfish into inch pieces, remove bones and skin, place in a dish, cover with boiling water, and keep hot for two hours.
- 2 Drain water, cool fish slightly, then shred it with your fingers.
- 3 Mix 1 tsp flour with 1 tbsp butter, add 3 tbsp boiling water, and cook until thickened.
- 4 Season the thickened sauce with salt and pepper, then mix it with the shredded fish and mashed potatoes.
- 5 Form the mixture into eight small flat cakes using floured hands, dredge with flour, and refrigerate until ready to fry.
