Salt Cod And Mashed Potato Cakes

Ingredients

  • 1 heaping cup salt codfish
  • 1 heaping cup mashed potatoes
  • 1 tsp flour
  • 1 heaping tbsp butter
  • 3 tbsp boiling water
  • Salt and pepper to taste
  • Flour for dredging

Method

  1. 1 Cut codfish into inch pieces, remove bones and skin, place in a dish, cover with boiling water, and keep hot for two hours.
  2. 2 Drain water, cool fish slightly, then shred it with your fingers.
  3. 3 Mix 1 tsp flour with 1 tbsp butter, add 3 tbsp boiling water, and cook until thickened.
  4. 4 Season the thickened sauce with salt and pepper, then mix it with the shredded fish and mashed potatoes.
  5. 5 Form the mixture into eight small flat cakes using floured hands, dredge with flour, and refrigerate until ready to fry.
